I came across a healthy chocolate chia pudding recipe which is packed with nutrients and great for snack. I’ve been searching for easy to make recipes to create for Scout. Lets face it, I’m no Martha Stewart in the kitchen so I need my recipes to be as remedial as possible! I try to incorporate my Vitamix blender in everything I make. I love this blender, it creates soups, ice cream, cashew milk, etc. The best gift I’ve ever received. I highly recommend them.
Ok, let’s get down to business. This is what you will need for this supper yummy dessert/snack packed with protein. Did I mention It’s also sugar-free, sweetened with dates?
What you’ll need
— 1 cup plain or chocolate soy or almond milk
— 1/2 cup (packed) pitted dates
— 3 tbsp chia seeds
— 1 1/2 tbsp cocoa powder
— 1/8 tsp sea salt (slightly rounded)
— 1/2 tsp pure vanilla extract
— 2 – 3 tbsp unsweetened shredded coconut
— 2 tbsp mini non-dairy chocolate chips (optional)
What to do
In a blender, add all ingredients except coconut and chips. Blend for a minute or more (depending on blender), until seeds pulverized and pudding has thickened. Transfer to a dish, stir in coconut and garnish with chocolate chips.
* I didn’t add the coconut since Scout is not a big fan, still came out great!
